Yean Yang, 42, dries about 30 kilogrammes of fish on bamboo racks in Boeung Tompun commune of Phnom Penh’s Meanchey district yesterday. Yean Yang says it takes two days to dry the fish in periods of hot and dry weather. Once the process is completed to his satisfaction the fish are packaged and shipped abroad.
